Notes about Recipes in this book

  • Lemon-cardamom blueberry muffins

    • lean1 on May 17, 2026

These muffins are easy to put together and are delicious. I didn't have blueberries but used frozen from my garden black raspberries. They are very tall and look like a bakery muffin. I also used non fat milk to reduce a few calories. Will make often.

  • Dilly garlicky eggplant dip

    • lean1 on May 17, 2026

Terrific dip made half the amount. Just had trouble getting all the seeds out after roasting. Great combo of flavors.

  • Middle Eastern chili crisp

    • AtuG on May 08, 2026

AMAZING!!! ?? there is nothing more to say!! ??

  • Michel's sun-dried tomato & olive dipping oil w/ burrata

    • nlehrer on May 05, 2026

      So delicious!!

  • Gorgeous green salad w/ labaneh-lime dressing

    • AtuG on May 11, 2026

This recipe was really good and I chose to make it today because it was really fresh! I made it too soon and it got kind of soggy, but it was nice!

  • Roasted sweet potatoes w/ labanehtziki & chili crisp

    • AtuG on May 14, 2026

Very different and unusual mix of flavors but it works beautifully

  • Sheet pan amba-glazed fish w/ snow peas

    • ami_8c0iz8 on May 16, 2026

I used about a pound and a half salmon fillet since the dinner was just for my husband and me. Cooked the fish about 5 minutes longer because it was a thick fillet. I have never used amba before but was a surprisingly delicious condiment, not sweet despite the pickled mango as the main ingredient, reminiscent of an Indian curry.

  • Toum-ish chicken thighs w/ roasted radishes, apples & fennel

    • mpo on May 09, 2026

I added cauliflower and didn’t roast apples, which I don’t love. Very good but my only comment is that I made the mayonnaise mix per the recipe but there was no additional toum to put on the side. There was just enough to cover the chicken only. Very good-just not enough!

    • Lepa on May 16, 2026

This was really delicious. The chicken was good and the roasted vegetables were great. Like the other reviewer, I didn't think there was enough toum. I'd make double or triple the amount next time as my kids stopped eating the chicken as soon as we ran out. I served this with brown rice/barley as a side. I love Adeena's cookbooks and this recipe was a great start.

  • Shawarma-spiced turkey pita smashburgers

    • gboden on June 03, 2026

      These were okay

  • Cheesy, spicy gnocchi w/ greens & beans

    • shep0012 on June 01, 2026

Yum, even with TJ’s cauliflower gnocchi instead of regular. I also replaced the spinach with mixed braising greens from the farmers market which amped up the heartiness. As an fyi at least as of today’s date the title in Cookshelf is incorrect—it should be greens, not green beans. Came back a few minutes later to add, this is really really good. It got better even after sitting for a few minutes.

  • Roasted cauliflower w/ creamy cashew red pepper sauce

    • AtuG on May 14, 2026

This was amazing!! ?? it was easy to make and it looks so special!! Loved it and my husband did to.

  • Grilled basil chicken & nectarine salad

    • Lepa on May 19, 2026

Everyone in my family found this salad refreshing and delicious. We loved the bright flavors.

  • Grilled skirt steak pita panzanella salad

    • rachel_q1lg6q on June 01, 2026

Made this with spring greens instead of arugula and a bag of pita chips. This came together so quickly that I’m rating it 5 stars because of how easy it was. Great weeknight rotation.

  • Preserved lemon, asparagus & cherry tomato orzotto

    • nlehrer on May 11, 2026

Toasted the orzo first and grilled all the veggies. Springy and delicious.

    • Nancy402 on May 31, 2026

A winner. Made a great Spring dinner with grilled salmon. Flavourful and easy. Added some basil to garnish.

    • Lepa on June 02, 2026

I think I made a mistake as the final texture was soup instead of risotto. Maybe it was the orzo I used, which is egg based, and it absorbed less liquid? I liked the flavors and am willing to try this again, especially because others have not noted any problems with the recipe.

Publishers Text

New York Times bestselling cookbook author Adeena Sussman offers a simpler approach to Israeli-inspired home cooking with thoughtful, satisfying recipes ideal for every day.

For Adeena Sussman, the kitchen is an island of calm: A place where she can center her mind, set the rules, and create a daily haven of deliciousness through her cooking. These days, she finds herself embracing the mantra “when the going gets tough, the cooking gets easy.” Pandemics, wars, and the busy pace of a very full life have led her toward a smoother, more streamlined cooking approach embodied in the Hebrew word, zariz, or “quick.” This pared-down style doesn’t mean sacrificing the rhythms, sounds, and sensory pleasures we experience while preparing vibrant, exciting, yet simple recipes. Instead, it has led her to rely on fewer pots and pans, a more edited pantry of highly versatile ingredients to create maximum flavor, and simple, thoughtful techniques that bring meals together effortlessly--always with her signature, flavor-forward style.

Most of the recipes in this cookbook contain fewer than 12 ingredients—not including olive oil, salt, pepper, and lemons, which are staples of Adeena’s Middle Eastern & Mediterannean-inspired dishes. From comfort foods like Sunny Sheet Pan Shakshuka and Baharat-Spiced Mushroom Hummus to satisfying mains like Hachapuri Pizza and Spice-Drawer Schnitzel, Zariz will help you cook with ease, making your kitchen a place of calm, deliciousness, and joy.
