    Quinoa salad with pickled cattail and raisins (pg 138) is a grain-vinaigrette salad with cucumber, raisins, pickled cattails, and parsley. I prefer room temperature to chilled for service. This salad is interesting without challenging the unadventurous eater. Worth repeating.
