  • Florentine bars with candied orange and cherries

      These were really delicious. A buttery shortbread base then the Florentine layer of almonds, candied orange peel and dried cherries with a trellis of dark chocolate on the top. I used the candied clementine peel recipe from p.133 for the candied orange peel.

  • Rum raisin-chocolate roulade with whipped chocolate ganache

      I made this for Christmas dinner and it was very appropriate as it looked like a chocolate log. It is really rich, a small amount goes a long way. Don't worry too much if the roulade cracks as it rolls, the ganache will cover a lot.

  • Chocolate mango cloud cake

      This was a very easy but impressive dessert. A gooey, rich flourless chocolate cake (basically a baked chocolate mousse) is topped with diced mango and a thick "cloud" of sweetened whipped cream. The recipe says whip the cream to soft peaks but it needs to be thicker than that - mine started sliding off the cake.

  • Apple, pear, and quince pie with cheddar crust

      Excellent fruit dessert, not super-sweet. The cheddar cheese crust adds great flavor. I used 4 apples, 4 pears, and 2 quince in a deep-dish 9 inch pie plate , which was the perfect amount of fruit.
