• Russian sweet and sour cabbage soup

    Made this again, this time using a 28 ounce can of crushed tomatoes instead of fresh. While the recipe author disparages the use of fresh dill, and the soup is good without, adding some chopped fresh dill just before serving brings it to another level, at least as far as I am concerned.

• Minestrone with Swiss chard

    This soup ends up tasting a lot better than the sum of its parts. Thick, nourishing, and utterly delicious.

• Mussel soup (Zuppa di cozze)

    So very easy and so good. If you buy some mussels, everything else you need is probably in your pantry. Bread is essential for sopping up all the wonderful sauce.

• Celery and Parmesan salad

    Very refreshing, simple, elegant salad. I used red wine vinegar instead of the lemon juice & added a drop of olive oil. Everyone commented on how surprisingly good it was.
