    Whilst my vegan days are behind me this book remains as a must keep in my collection along with books by Isa Chandra Moscovitch and Chloe Coscarelli. The recipes I’ve tried have all been flavourful and the Almond Zen granola recipe is to die for. Sweet delicious goodness and worth the price of the book for it alone.

      Amazingly delicious. When I have been out of almond butter I have made it with peanut butter with equally delicious results. It is quite sweet but easily adjusted to taste.

      I've made this recipe at least 10 times over the years. As soon as garden fresh tomatoes are available this recipe is on deck! Makes the best veggie BLT's!! Calls for coconut flakes, I use the thicker coconut"smiles" that are slices of dried coconut. Can find in natural food store bulk bins or I buy online from Next Organics. Make sure to let marinade soak in fully before baking. Keep a really good eye on them so they don't get overdone and bitter. I've done that several times:( These store well in a mason jar (after cooling) for several weeks.
