    Mom, a food scientist, loved this book through both her cancer fights. Lost her to the second one, but this remains my most prized cookbook. If I could only have one, it would be this. If you have a loved one in cancer treatment, please please please read or gift this!

    Out of all my healthy living cookbooks, this is my favorite. It contains delicious, healthy recipes that my entire family enjoys. As a cancer patient, I have found valuable health information in this book. For instance, there is an extensive list of ingredients and their effects on cancer. The only downside is that the recipes are not super super quick and easy, so it would be hard for patients to make for themselves if they're undergoing chemo. Otherwise, I rely on it almost daily.

      I made this yesterday for the first time and had it for breakfast this morning -- drank it out of a mug. Absolutely delicious! It would make a great stock for vegetarian/vegan soups and even those with meat. Right now I plan to just drink it on its own because it's so healthful and really tasty. And yes, as AOski says, it requires a huge pot. My stockpots are in storage right now, so I had to divide it between two pots as well.

      You'll need a VERY big pot to pull this off. To make sure I have room I split the recipe evenly between two 8 quart pots.

      I make this often for my family. It's a little bland, so I spice it up by either substituting a spicier pepper for the pimiento or adding hot sauce.

  • Mashed cinnamon butternut squash

      Simple, delicious butternut squash dish. The spices and sweetening for a smallish butternut were subtle, just enough to enhance the flavor of the squash. Instead of putting the cooked squash in the FP, I just mashed it with my big pastry fork and it was good that way, but it would probably be lighter and creamier done as instructed in the recipe.
