  • Hummingbird cake

      Made this cake for a crowd and it impressed. Followed the recipe precisely but needed to bake for an extra 10 minutes or so. Made both cake and frosting in the thermomix. The frosting was easy to handle and moulded beautifully. The cake cut easily and was still good three days later. My only issue was locating crushed pineapple in 2 local supermarkets. Bought pineapple pieces (440gr) and blended to obtain 250gr. Will definitely make this again. It would be great for a picnic.

      This is a lovely, moist, not overly sweet and hard to stop at one cake. I didn't bother making the marmalade jam that you spread over the top of the uncooked caked, but instead dolloped a lime and ginger marmalade I had in the pantry.

      A beautiful cake. I didn't have enough ginger and used only two teaspoons, which was still really nice and didn't seem to have any adverse effects. I also cheated and used crushed up some peanut brittle I had in the pantry, instead of making the walnut praline. Really suited the cooler weather we have been experiencing.

      As everything so far in this book, the recipe is perfect & it all worked. This was just too sweet for my liking though. The frangipane was great - I think it was the pastry that was too OTT (maybe the equal parts flour & sugar might have been a warning!). It also makes a huge number of portions (at least 12x or so).

      So easy, and all store cupboard ingredients! Need to ensure the paper has high sides to ensure there is enough room for the ginger icing. Big hit at our house.

      Another winner, big hit with friends. Great fudgy flavour thanks to the white chocolate. My one complaint would be how difficult this is to cut with banana chips on top! Might need to place more strategically next time.

      Even taking ‘fudginess’ & overnight refrigeration into account, these were significantly undercooked using the times specified. I’d think at least another 10 mins or so would be needed.

      One of those easy dishes to make that can be sliced into nice squares to serve at a party - pre make and warm through. Great flavour, would consider adding extra cheese next time.

      This makes 8x very generous serves. With a pizza dough crust, this was really filling, though we felt it needed a little something extra. Maybe throw in some herbs - sage, rosemary or thyme would work well.

      This made an enormous tart! The filling was just ok and the pizza dough was disappointing. Don't waste your $$ or time on this recipe.

      Excellent. I made both the pastry & the filling ahead of time, then assembled & cooked midweek for a really easy meal. They are 'party pie'-sized in the recipe, but I made to a more typical 'individual pie'-size & added 10 mins to the cooking time.

      This is a really good short crust pastry for savoury tarts and pies. I have used it several times now and it has rolled out and cooked well.
