      Used 150ml cider vinegar and 100ml water - gave an acidity of just below 4. Made with 10 Scotch bonnet chillies and cherry tomatoes. Balanced flavours with 1tsp caster sugar and extra large pinch of salt. Definitely hot!

      I loved this but sadly kids and husband don’t like olives or capers so it wasn’t for them. Tasted even better the following day. Just wish it had some protein in there.

      Lovely recipe. The sauce is so delicious and smells wonderful. Would have liked more guidance on the 'tandoori spice mix' but ended up googling a quick recipe. We used with quorn fillets reducing the cooking time a bit and it worked well. Really flavourful. I would say the dried fenugreek leaves makes the dish so don't skip it - its worth seeking out.

      This is a delicious pasta bake the whole family liked a lot. As written this makes a lot, enough for 2 lunch portions the following day as well. While quite involved - roast eggplants and tomatoes in the oven, pre-cook pasta, make sauce, assemble and then bake for another 30 minutes - I would happily make this again.
