      Like this a lot. Did 1 courgette raw, 1 fried with the chilli & lemon zest. Didn't add capers this time. Might swap halloumi for fancy mushrooms, butter beans or something else vegan. Feta would do the job nicely.

      This was good with parathas - I used 2 tsp mild chilli powder and didn't think it needed any chutneys or chilli sauce. I made the full mixture and froze half, which worked well and made for a very quick follow up dinner

      I made this with rosemary, chestnut mushrooms, passata and brown miso. It was nice - maybe adding a bit of thyme towards the end would give an alternative note? The main flavour was mushroom, but it was pretty straightforward and I'd make it again. I used the food processor to chop the veg and mushrooms - I'm not grating a mushroom!
