      Husband called this dish surprisingly good because he usually does not like fennel. However, the fennel taste mellows down while cooking and blends into the onions and tomatoes. When skipping the marinating step this is also a perfect weeknight dinner dish that comes together easily and let’s you do something else while it’s cooking on the stove.

      Picture shows whole thighs, ingredients say diced - imagine either would work but it'd be good for someone to report back here. Be wary of hummus ingredients - half the can of chickpeas go in it, the other half in the main recipe.

      We loved this; easy and delicious. Good idea to make the hummus recipe, as it spreads easily on the plate for presentation, and is not too pungent so doesn't overwhelm the dish. Pomegranate seeds important. I was a bit puzzled by the diced chicken, but in the end chopped it into 1 1/2" pieces, which worked perfectly.

      Once you have mastered spatchcocking a super simple recipe. Made with rice, delicious marinade.

      This should have tasted better than it did. It is dependent on the spicing of the chorizo - mine was a supermarket cooking chorizo. I would add a fresh chilli and check the seasoning before serving.
