Notes about Recipes in this book

  • Carrot cake cupcakes

    • jay.moe on February 25, 2023

Quick and easy to mix together. Cupcakes and icing were very tasty. Cupcakes had a nice amount of spice without being overly sweet. I didn't brown the butter, and the icing had a nice cream cheese tang that complimented the cupcake.

  • Death by chocolate cupcakes

    • jay.moe on February 20, 2023

I used Lindt 70% dark chocolate. The chocolate flavor wasn't as strong as I had hoped, but still tasted good. Made the recipe a second time using dutch-processed cocoa and doubled the espresso powder for a better chocolate flavor. The cupcakes were very moist and the frosting was deliciously creamy. The optional chocolate syrup had a strong contrast to the chocolate of the buttercream and was overpowering right after assembling the cupcakes, however, after it sat for a couple of hours, it blended better with the buttercream and was a pleasant contrast to the sweetness of the frosting.

  • Small-batch apple cinnamon coffee cake

    • jay.moe on May 03, 2023

Quick and easy to make. The cake was much better after it had completely cooled. While it was still warm, the texture of the crumb was gooey from the shredded apples. The flavor was warm and spicy without a big apple flavor. The cake held up well for three days. The size was nice for a small family.

  • Vanilla bean cupcakes

    • jay.moe on March 01, 2023

My daughter wanted funfetti cake, but the picture of it in the book looked like a dry cake. I made the vanilla cupcake instead and added sprinkles to the batter. Moist cupcake with sweet, creamy icing.

  • Fluffernutter blondies

    • cookingbychapter on June 29, 2023

These were great and simple to make! I didn't measure the toppings, just covered the top and swirled. They did take much longer to bake. I had to add at least another 15minutes....could be my oven. They were gone in a day.

  • Raspberry crumb bars

    • MarciK on February 20, 2023

These were tasty, easy to make. Came out as expected.

  • Pumpkin crumb cake muffins

    • jay.moe on September 24, 2023

The muffins have a nice spice balance and the right amount of topping. After reducing the oven temperature it took 5 minutes longer than the recipe stated for the muffins to be completely baked. Great recipe!

  • Cheddar bay biscuits

    • jay.moe on March 31, 2023

The biscuits were tender and had a prevalent cheddar taste. The garlic butter topping was a bit strong. Next time I would use less garlic powder in the butter.
