      Lemon zest was great! Loved being able to use up my blueberries. This is a simple recipe that is delicious. I thought my batter was quite thin after sitting so I sprinkled a small amount of extra flour on top and mixed that in. It was still a thin batter but it did bubble up and cook beautifully.

      Not surprisingly, my potatoes took longer to cook and I added more garlic powder because I didn’t have fresh garlic. This was tasty and satisfying! Ketchup was a fun addition. Used a little sriracha mayo and ketchup but could see using barbecue sauce, a cashew cream type sauce, or really pretty much any sauce drizzled on top. Instead of the beans, I made the tempeh bacon in this cookbook and added that on top. Made a great lunch - but would agree it could be a meal for any time of day!

      Most versions of tempeh bacon I see have smoke in them and we love that, however, this was simple, had it’s own nice hot sauce vibe (I used scant amounts of Red’s hot sauce, could have used the full amount), and it was fantastic on top of the Cowboy Casanova hash in this same cookbook. The real challenge was not eating it all before the hash was done cooking!

      Easy to make and healthy…my whole family enjoyed it. Perfect to make on a chilly day! Doesn’t look outstanding but tastes great, filling too. I put half of the broccoli in when I added the potatoes, etc so they were blended. Then, I put the other half of the broccoli in at the end of the recipe, as written. I only had red potatoes instead of Yukon Gold, they worked perfectly. I added about 2t. salt + fresh ground pepper to taste. Topped it with homemade crotons and fresh parmesan cheese. Make again!

      I thought this was ok, I added a cup of dry tiny white beans to make it a little more substantial to serve as a stand-alone dinner. I added garlic salt at serving. Would be good with some sourdough or similar bread on the side.

      I added a bit more balsamic vinegar and a little bit of olive oil to the dressing. I felt the dressing was better with a little more acidity.

      This wasn’t bad or good. I’d probably try it one more time as I did the spinach substitution and I think it would probably taste substantially different with basil, those are very different flavors. I’m also curious which kind of paprika she uses, I used a smokey one and I’m not sure it was the correct choice.

      This is good for a quick and easy weeknight dinner and it leftovers reheat well the next day for lunch. I may try making it next time , though, with reduced fat coconut milk as it felt a little bit heavy, though tasty.

      This was a good, easy weeknight dinner that I plan on making again. I liked the contrast of the crispy chickpeas, which I had to stop myself from eating before the meal was assembled, with the soft sweetness of the potatoes.

      This was quick and easy to make, and actually quite delicious. The mushrooms came out quite juicy and went well with mashed potatoes and roasted tenderstem broccoli. I can see making this often as an easy weeknight meal.

      These were really good! The flavor was a perfect base to sub a meat burger. The mixture was a bit wet and the texture after baking was still very mushy and bean like. The leftovers heated in a pan were much better texture wise. Next time I'll bake them ahead of time and reheat quickly in a skillet before serving.

      This was pretty straightforward to make, though a bit more time-consuming than the author specified. It did not firm up as well as I had hoped it would in the time specified, but as my sides were ready I served it anyway. I really liked the taste of the crust, though the loaf itself was a little bland so I made a quick gravy to pour over it.

      I could not make this work for me. I used (and wasted) some very good balsamic vinegar, but as much as I tried to balance the acidity with maple syrup, this remained too acidic for my tastes.

      3 stars. Good base but nowhere near enough salt or seasoning to taste like ranch. I ended up doing 3tsp each of garlic powder and onion powder, increased the parsley to 3Tb, added 2TB dried chives, and doubled the salt. Added a smidge more apple cider vinegar too. Tofu makes it a very pleasant mouthfeel and makes it low calorie! Not vegan, but may add a smidge of mayo next time. The dairy-free skeptics in the family liked it

      This was really easy and relatively tasty, could definitely still taste that this was tofu though. That being said the texture was spot on for ricotta. I ended up mixing this mixture with real ricotta and using it in stuffed shells, and it was perfect! Alone I still think it would work wonderfully in the stuffed shells. But this was a great addition to stretch the ricotta, and add a protein boost.

  • Fudgy avocado brownies

      These don't bake up to be the classic brownie with the crackly, glossy top, but they're pretty good. Right out of the oven after it has cooled some, they are closer to cakey than fudgy; letting them sit out for a day gets them closer to fudgy and is my preference. True to her word, you can't really taste the avocado, but be sure to mash them very well, otherwise you'll find light brown/green-ish avocado speckles after baking. They did not noticeably affect texture or taste while eating, but may turn off folks that aren't fond of surprise ingredients.
