      Better than a restaurant’s! I usually add cubed chicken, and if I feel like something a bit sweeter, I’ll sub a can of cream of coconut for one of the cans of coconut milk. Always a hit, and freezes well.

      This chowder is fantastic. I’ve made it a few times now. It’s super quick and easy, but has tons of flavour. I recommend adding the optional ingredient of chili powder. Sherry is also optional. I didn’t have any, but would like to try adding it sometime. I had to substitute feta for the cotija and it was perfectly fine. This chowder is in our regular rotation.

  • Sausage curls

      This was phenomenal. I wouldn’t have made it if I didn’t think it was going to be good, but it was far better than I even expected. I only made a few changes to the recipe. The recipe calls for 2 lbs. of Italian sausage and I used just one, and we thought that was perfect. I added extra marinara after I released the steam as I had extra in my jar. I had to use 2 jars, as one wasn’t enough, and I probably had about 1-1 1/2 cups extra and just added it and was glad I did. It was nice and saucy, but not too saucy. Perfect. I used garlic and herb Boursin instead of cream cheese (recommend) and I added the optional crushed red pepper and cayenne (but would add a bit more next time). The pasta was perfectly cooked too, which always amazes me when using the IP to cook pasta. This was absolutely delicious and I’m already looking forward to making it again.

      This was amazing. Super quick and super tasty. I added the “optional” ingredients (peanut butter, sweet soy sauce and crushed red pepper) and would do again next time, except I’d stick to 1/4 cup peanut butter instead of the 1/2 cup I added. It was just a tad “peanut buttery.” I also used bucatini for the noodles and would do so again. So good! We devoured it!

      I made half the recipe, however, used the full spices (but half the rice, onion and broth). Delicious! I served it with kebabs and salad. I will be making this a lot. So easy and the rice was perfectly done.

      I substantially modified this and totally missed adding the Dijon mustard. Added beefy mushroom soup and consomme instead of the beef broth. And, used an onion instead of the onion dip. The addition of the boursin cheese is brilliant! We will make this again!

  • Chinese-style spareribs (Char siu)

      Pretty dang tasty, I made it with 1 rack of ribs and would definitely use two next time (the recipe as written makes enough sauce for 2 racks easily). Definitely caramelize under the broiler like the recipe suggests!

  • Jewish short ribs

      I had bought beef short ribs and didn’t know whatnot do with them. This recipe is really easy and fast to prepare. My husband loved it, for me it was too rich.

      This was very tasty and I will make it again, probably substituting chuck roast for the ribs. It is very rich from the fat drippings, and very sweet. Next time I will cut down the brown sugar or leave out entirely. I did add the optional onion soup mix which was very good and helped cut the sweetness a little. This should make great leftovers.
