• Watermelon bruschetta

    This is the recipe that prompted me to buy this book, and it lived up to expectations. The recipe notes state that the trick is to dice both the watermelon and the tomato the same, as when mixed they will all look the same with the watermelon being a surprise. I tried this out on my guests and it worked- they were pleasantly surprised at the hit of sweetness from the watermelon balanced with the acidity of the tomato. This in one of those low effort high reward recipes I seek- I see this being a summertime staple.

    I had such high expectations for this recipe, in the end just ok, not a repeat.

• Pan-roasted chicken with creamed greens and potatoes

    This turned out nicely - however I had to improvise based on the instructions. While fine enough probably not a repeat.

• Ultimate honey-mustard chicken

    Very delicious chicken. Easy, just have to marinate overnight. We used bone-in, skin-on thighs, and they were really tasty.

• Pan-seared pork medallions with apples, balsamic vinegar, and bourbon

    Delicious and quite easy to make on a weeknight. Lovely combination of flavors. Great dish for fall, or anytime.

• Fish with sweet potato-poblano hash

    We enjoyed this very much. The hash was really flavorful, and prep was easy. I knew when I read the recipe that 12 minutes wasn’t even close to enough time to roast the potatoes, especially in one inch cubes. I cut them a little smaller, and it still took around a half hour. We used halibut for the fish, with a simple pan sear. Nice weeknight dish.

• Peach, basil, and rosé sangria

    I let the vodka infusion steep for about a day and it made for a nice sangria. It think I would prefer using fresh peaches and basil for the drinks as fruit in the mixture itself was pretty soggy. I might leave out the lime zest next time as my mixture was a bit tart.
