Notes about Recipes in this book

  • Spiced ginger cake with rhubarb compote

    • msholl on May 04, 2024

This cake has deep, rich flavor like a good gingerbread, but feels a bit fancier...like a real "cake". I have made this cake several times, but haven't yet tried the rhubarb compote.

  • Walnut shortbread

    • msholl on May 04, 2024

Fantastic shortbread - toasting the walnuts gives the cookies great flavor and texture. I reduce the sugar to 1/2 cup instead of the 3/4 cup that's called for.

Publishers Text

As seen on PBS, hip, modern, elegant Irish cuisine from renowned pair of chefs.

American audiences are discovering an imaginative, modern cuisine based on the fresh, green flavors of Ireland. Drawing on their culinary training in Europe, Hong Kong, and San Francisco, the Rankins have created recipes that are elegant, approachable, and most of all delicious. The stars of their recipes are the fine smoked salmon, colorful boutique potatoes, wholesome farm-raised game, and exquisite orchard fruits and berries of Ireland's lush countryside.
