      This has become my husband's signature recipe when he is getting all fancy in the kitchen. He's been cooking it for years using this recipe and it's so delicious.

  • Coconut bananas

      Very popular with the kids, who have now learnt to make it for themselves. To coat with coconut with less mess, I place the ingredients in a lunchbox with a lid, and gently shake.

  • Almond jelly

      A big favourite in our family. I make just the jelly, to add to any fruit, particularly if we're restricted to tinned fruit. I use gelatine instead of agar-agar, and also use a complete small tin of evaporated milk - no waste/leftover - and adjust the liquids accordingly. I am tempted someday to substitute other essences for the almond - just to experiment. I have rosewater essence particularly in mind.

  • Chicken and galangal soup (Tom kha gai)

      Really easy. I doubled the recipe and served it as a main course. It’s good and flavorful, but the lime was a bit overpowering. I think it would be best eaten as a component of a larger meal.

  • Green vegetable curry with sweet potato and eggplant

      Vegetables were onion carrot beans zucchini peas, used David Thompson’s green curry paste from Thai Street Food (beef green curry). Used as an accompaniment under some bbq beef I marinated in the paste and some coconut milk. Plus rice, yummo!

  • Mixed vegetables in mild curry sauce

      Vegetables were sweet potato, carrots, beans, baby corn, bok choy. Added a dash of turmeric powder for colour. Served as a side to Thai bbq chicken with rice. It was surprisingly complex what with the sweet, salty, sour elements.
