      Very moist banana bread. Took a bit longer than an hour to cook thoroughly.

      This should be called Corn and Pepper Bisque because of all the red and poblano peppers in it. We liked the zesty flavor and it was a good way to use of some of the frozen corn I bought at the beginning of the pandemic. All in all it is a nice hearty soup.

      Even better with a marinade of kefir instead of milk. Kefir adds body to the breading.

      This is peach pie kicked up a notch to heavenly status! The brown sugar gives it a hint of rich caramel flavor unlike white sugar. I had to make a couple of minor substitutions (peach liqueur instead of peach brandy and apricot jam instead of peach jam) but the end result was a perfect celebration of fresh peach flavor. I also used cornstarch instead of flour as a thickener which I prefer. I let the peaches sit in the bowl with the liqueur, jam, brown sugar and cornstarch for about 15 minutes and put them into a medium frying pan over low heat to gradually thicken before putting the filling into the pie shell so that the bottom pie crust would be less likely to sog.

  • Day-after turkey succotash soup

      Good way to use up the last of the Christmas turkey. I added some extra veg in the interest of cleaning out the crisper draw (green pepper and carrots). I also replaced the green onions with diced yellow onions and made it more like a stew by cutting the amount of broth in half. The soup really benefitted from a splash of cider vinegar and a healthy dollop of Louisiana hot sauce.
