Definitely easy. Used the stick blender. Didn’t need half & half.

This is the BEST tomato soup! All time favorite

Hands down, the best Tomato Bisque and it’s very quick to make. I use Imagine brand “No Chicken Broth” instead of chicken stock and I don’t purée and strain the soup because it isn’t very chunky to begin with.

  • Spinach-apple salad

  • Catalan baked fish (Mero à la pastelera)

    • tarae1204 on February 23, 2024

A nice, no-fail baked fish recipe with a base of parsley-garlic-breadcrumbs enhanced with almonds, paprika, tomato and wine. The thinly sliced lemon quarters leant an overly bitter note (even when using a sweeter Meyer lemon). I'd consider halving them, or just swapping for a squeeze of lemon to taste at the end.

  • Mendocino fish stew

    • anya_sf on July 28, 2023

Very quick and simple enough for my teenage son (who's just learning to cook) to make with assistance. Local Pacific snapper, similar to rockfish, worked well here. We sauteed it less and simmered the wine a bit longer to allow more of the alcohol to cook off. Used chopped tomatoes instead of whole for a more uniform sauce. Despite the salty ingredients, salt was needed at the end. Very tasty served over rice.

This is an easy and delicious stew. Be sure to prep all ingredients, as the actual cooking is very quick. The ingredients call for "snapper or any rock fish" and I used fresh snapper. The green peppercorns and olives make this a special stew.

  • Tangy beets

    • tarae1204 on May 10, 2023

A recipe this good, that involved only boiling a vegetable and adding two simple ingredients, gets five stars in my book. This is memorizable and delicious.

Decent but bland. Improved with a buttermilk glaze and diced candied ginger. Better recipes exist.

      So easy, and fantastic!

    • anya_sf on July 26, 2024

This never set for me, perhaps because I halved the recipe, although the volume still seemed sufficient for my Vitamix. After blending at the lowest speed for the stated time, with little visible change, I tried increasing the speed, but that didn't do it either.
