Fragrant roasted haddock from Persiana Everyday: All New Recipes from the Best Selling Author of Persiana (page 117) by Sabrina Ghayour

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute olive oil for garlic oil.

Great flavour (perhaps because I made my own Ras al Hanout)? Quick and easy for a weeknight. However, DON'T use the suggested braised celery accompaniment, it is truly awful in every way!

We liked the flavor of the haddock with the turmeric and Ras El Hanout. As a previous reviewer mentioned, it has a mild taste and needs to be put under the broiler at the end to create a char. The suggested broccoli and tomato accompaniment was a good foil for the turmeric.

Agree with previous poster that the taste mild. I used flake and it needed generous salting.

I used halibut. This needs plenty of salt. It has a mild taste and is good. My fish did not char until I ran it under the broiler.
