      It was too soft for my taste. Would omit the chickpea flour next time and only use gluten flour as I prefer seitan that has a little more bite to it.

      This was delicious and definitely feeds a crowd! The peanut topping is very addictive and the salad is like a meal with all the fruit and veggies in it. Took it to a potluck and everyone loved it, it was a perfect, festive winter/holiday salad and a great complement to the chili that it was served with.

      Variation posted by Author on no meat athlete: 2 cups fresh corn kernels (frozen is okay in a pinch) 1 1/2 cups cooked white lima beans, if using canned drain and rinse well 1/2 lb. red ripe tomatoes (cherry tomatoes look cute here) 1 small red onion, thinly sliced 3 tablespoons finely chopped cilantro 3 tablespoons lime juice 1 1/2 teaspoons chile powder or hot smoked paprika 2 tablespoons good quality olive oil 2 teaspoons agave nectar 1 teaspoon dried oregano 1/2 teaspoon salt or to taste freshly ground pepper to taste

      Everyone liked - cook like refried beans. Used Salvadorian red beans (Domingo rojo, small red beans). Forgot to add the tomatoes and papelon. Doubled the cumin, added corn and peas at end.

      This smelled absolutely incredible while it was baking. Although it didn't quite live up to that promise, still very good, and will probably make again. I used stock, since I didn't have any wine or beer in the house. Either of those probably would have been an improvement...!

      Since recipe header mentioned it could be used to fill tacos, crumbled tofu and cooked it over the stove top instead of in the oven. Turned out good and crumbles were well-seasoned.

      Good, nothing earth-shattering, but a perfectly nice black bean soup. Made a very pleasant lunch with some corn tortillas. The smoky base note is very nice.

      Once you locate masarepa, this is a quick dish to throw together. I like the Venezuelan-style since it is thicker but baked (after pan-frying). I usually pair this with a tofu scramble but I think one of her bean dishes could work really well, too.

      Super good. Made with homemade cashew coconut milk (1/4 cashew 3/4 coconut) for all the nondairy milk. Very sweet.
