Notes about Recipes in this book

  • The secret to making yoghurt

    • inflytur on February 23, 2020

Great overview that will convince you that you can easily do this yourself. I would have preferred more exact information on temperatures.

  • Vanilla and sour cream waffles

    • KCKB on December 28, 2025

My preference will always be overnight yeasted waffles, but these are a good fallback option for times when you don’t remember to make waffle batter the night before, or don’t have the fridge space to house a big bowl of batter. These are crispy on the outside with a fluffy, creamy interior; their flavor is subtler and less complex than a yeasted waffle.

  • Oatmeal bread

    • Melanie on June 13, 2014

Tasted best while still warm, served with lashings of butter.

  • Mama Johansen's vegetable soup

    • Cook250books on July 02, 2024

For the last decade, when the weather suddenly gets cold, I return to this recipe. I use chicken stock, and sometimes add shredded chicken or a poached egg for some extra protein.

  • Spiced apple cake

    • inflytur on January 05, 2019

Cardamom forward spice cake with a moist crumb. It took much longer to bake than the recipe indicated. Putting extra apples on the top will slow the bake.

  • Blackberry, almond and cardamom cake

    • inflytur on July 15, 2020

Typical texture of a gluten-free cake made with nuts. I prefer the texture when it is made with almond flour rather than the almond meal called for.

  • Gravlaks with dill mustard sauce

    • inflytur on December 18, 2022

The classic process for curing gravlaks. Perfect for your first foray. Additional spices I like to include are juniper berries; black and red peppercorns; and a touch of dill seed.

  • Poached egg, mushroom and beetroot salad

    • Charlotte_vandenberg on June 08, 2017

Very easy and tasteful salad, real autumn flavours, but on a wet day in June it was also very good.

  • Swedish anchovy and potato gratin (Janssons frestelse)

    • lkgrover on January 09, 2022

Good traditional Swedish casserole -- creamy potatoes, onions, and Swedish anchovies. I substituted multigrain crispbread for white Krisprolls.

  • Lingonberry jelly with macerated strawberries

    • Charlotte_vandenberg on June 08, 2017

Very nice and refreshing, dessert. Should leave strawberries to cool completely, otherwise jelly will --of course-- melt.

Publishers Text

We've long looked south for our food inspiration - but what about our neighbours to the north? We share a climate, a history (those Vikings got everywhere) and a love of cool, from sleek Nordic design to clear frosty November mornings. We also share our love of the outdoors - bracing autumn days, bright spring mornings, lazy summers by the water and long winter walks - and the pleasure of sharing good food with friends around the kitchen table. Discover the secrets of Scandinavian cooking - from delicious healthy breakfasts and leisurely brunches to tasty suppers and plenty of stress-free crowd-pleaser puddings. Learn the knack of putting together the perfect smorrebrod for a speedy Scandi lunch, and discover some very more-ish cakes and biscuits to accompany your afternoon cuppa. From cinnamon chestnut bread, cardamom cream buns and home-made gravadlax to soups, salads, smoothies and much more, Signe Johansen, a young cook steeped in the traditions of Scandinavia and trained by the best British chefs, shows us that it's not all herrings and meatballs...although you will find them in here too. Fresh, light, surprisingly indulgent, this is food to lift your spirits - it's quite simply Scandilicious!
