  • Gooey cinnamon rolls

      I love cinnamon rolls, only if they are not overly sweet. I did not make the cheese frosting for these, as I did not have any. These rolls are good to eat on its own, but I guess it would be even better with the cream cheese frosting. Very nice when eaten while still warm. Soft moist crumbs with sweet cinnamon taste and the fragrant orange zest, and fruity bite of the raisins. Lovely with a cup of tea. The rolls are not as soft on the next day, but can be reheated wrapped in foil, about ten minutes in the oven.

      Very delicious! I did the overnight rise in the fridge so I can bake it in the morning. Was very delicious warm out of the oven and still as delicious hours later after cooking.

  • Raspberry linzer bars with almond glaze

      These are absolutely delicious with the perfect amount of raspberries. Can definitely skip the lemon zest since it isn't very apparent. I did decrease the amount of sugar in the shortbread base to 1/2 cup of granulated sugar and 1/2 cup brown sugar. They are still plenty sweet without being cloying. The baking times seemed to be a bit off for my oven, the base was golden brown after 30 minutes instead of pale golden brown like the recipe suggests. Likewise for the second bake with the raspberry filling and the streusel added, the recipe calls for 25 minutes and I had to almost double that to get the streusel to become a nice golden color. Skipped the glaze, just doesn't need it.

  • Peach-brown butter shortbread

      I don't have fresh peaches, so I've used canned peaches. Used cold butter and made the shortbread crust the regular way instead of using the brown butter. (My brown butter failed!). Easy and quick to make. Brought it to my sister's house for a gathering, and it was gone pretty quick with scoops of vanilla ice cream. Nice!

  • S'mores brownies

      I've replaced graham crackers (which are to be lightly crushed and mix into the batter), with dried cranberries instead. Reduced both sugars, caster sugar to 1/2 cup and brown sugar to scant 1/3 cup. These brownies are very moist and chocolaty, nice with the marshmallows on top. The kids enjoyed these brownies with a glass of cold milk.

      This is really easy and quite to put together. The great way to use up all the jars of jam cluttering in the fridge. I've used three different jams, spreading each on one third of the oat mixture crust. Smells wonderful from the cinnamon and vanilla while baking. Lovely bars, nice with a cup of warm tea

      Made for daughter’s birthday. Frosting very chocolatey. Good balance of cake, raspberry, frosting.
