  • Farro tabbouleh

      I just made another batch of this. It's so good. I love the nuttiness of the farro and how it goes with the tart dressing and the crisp veggies. This keeps well in the fridge for about 3 days (I wait to crumble in the feta until I'm ready to serve and it's also great without, served with grilled chicken). This time I added just a bit of za'atar and I like the flavor.

      The optional raspberries was a nice addition to these soft, moist muffins. Using oil, rather that creaming butter and sugar made this a quick, easy recipe to make. Sprinkled with sliced almonds prior to baking, and glazed with lemon curd while still warm from the oven put these muffins over the top delicious!
