Re: Foodycats comment about quantities, I think the +2tbs etc only applies to the American volume measures. In the UK only the gram measurements need to be used.

Notes about Recipes in this book

  • Orange, melon and ginger gazpacho

    • danielle_7tm5qm on December 31, 2025

Have made many times. It’s truly perfection.

  • Yuzu prawn cocktail

    • Anea25 on August 12, 2024

a solid shrimp cocktail recipe but nothing exceptional

  • Feta, cantaloupe and lime salad

    • Anea25 on July 11, 2024

the dressing really makes the dish.

  • Lime-marinated fish with a lime, garlic and basil sauce

    • Anea25 on August 08, 2024

a solid fish recipe - given the ingredients I expected stronger flavours

  • Beef short ribs with lemongrass and lime

    • lkgrover on August 22, 2021

Good, slow-cooked beef short ribs stew. Sauce is flavorful with a strong lime component. I left out the palm sugar (and alternative brown sugar).

  • Pork and pomelo stir fry

    • lkgrover on February 24, 2019

Light, refreshing flavors which I don't normally associate with stir-fry. I served with fine udon noodles, which absorbed the sauce well.

  • Citrus risotto

    • lkgrover on December 07, 2022

Excellent lemon risotto, with the lemony flavor I wanted. I zested 2 small lemons, and juiced one. Also added capers & Aleppo chile flakes at the end, which the author recommends.

  • Buttered courgettes with lemon and nutmeg

    • lkgrover on June 27, 2021

Lovely zucchini with a light citrus & herb butter.

  • Stir-fried cucumbers with orange and Szechuan peppercorns

    • mcvl on March 29, 2022

A touch too sweet for me. I think another time I might cut the juice with white wine, or even white wine vinegar. Nice idea, though -- love those mouth-numbing peppers.

  • Citrus butter biscuits

    • Anea25 on October 19, 2024

nice texture but I would add more zest

  • Liquorice and lemon sherbet fairy cakes

    • pamelagarelick on May 27, 2023

I didn't have the crystallized lime so I mixed lime juice, icing (confectionners sugar).and licorice to make the icing (frosting). My IKEA licorice (all we can get here didn't melt as expected, so I whizzed it I'm a mini food processor yo get the consistency I wanted. Great compliment of flavours. Would make again.

  • Lemon curd slices

    • Foodycat on October 07, 2020

I used a jar of bought passionfruit curd instead of making my own. I used a food processor for both the shortbread base and the crumble topping, so it was very quick to pull together. I found the quantity "200g + 2tbs" absolutely infuriating. Is that 220g or 230? Who knows? I initially assumed the extra 2tbs was for something else but if it was I couldn't spot it in the recipe. It tastes good though. Lovely texture!

  • Rum and marmalade loaf cake

    • Eleanorconroy on March 25, 2025

Nice, simple recipe and certainly keeps well. I didn't have the dark and stormy marmalade so added stem ginger as per the recipe suggestion, but I might try it without that next time

  • Classic Seville orange marmalade

    • Eleanorconroy on February 04, 2025

This turned out nicely and I'd make it again, but this amount only filled 3 and a half 450g jars, not 10! Next year I'll definitely double the recipe

Publishers Text

Citrus fruits are the most exciting family of ingredients with which to cook. They satisfy almost every part of the palate - sweet, sour, bitter, and umami-enhancing, how many other foods are as versatile and transformative?

From the smallest squeeze of lemon, to the zing of lime zest, citrus fruits are almost magical. No longer seen as exotic, they are truly international. Take the humble lime: cornerstone of the American Key lime pie, fragrant in Thai curries, fresh in Mexican guacamole, used to cook raw fish in South American ceviche, pickled in India, and dried in the Middle East.

Citrus offers 150 inspiring recipes that celebrate these wonderful fruits. Through fresh salads, soups, seafood, Asian- and Mediterranean-influenced meat dishes, preserves and pickles, to the world of sweet pies, cakes, and cocktails, Catherine Phipps explores the myriad uses of oranges and lemons, and all things in between. Her recipes are straightforward, easy to follow, and work perfectly every time. Citrus is a vibrant, colorful source of delight and inspiration.
