Notes about Recipes in this book

  • Beet peel margarita

    • SheilaS on January 21, 2021

I liked this a lot. It's very pretty and beet flavor comes through in a subtle but pleasant way. I used a chile/lime salt (Tajín) to rim the glasses.

  • Dried apple peel chips

    • apattin on March 02, 2020

Very nice healthy snack. I'll add more ginger and nutmeg next time

  • Leek top cacio e pepe

    • mjes on August 14, 2021

Traditional cacio e pepe with greens added - in this case leek tops. It works.

  • Radish top ohitashi

    • mjes on August 14, 2021

A typical Japanese treatment of greens - radish tops are not my favorite but this recipe makes them quite appealing.

  • Pineapple peel and core lemonade with mint

    • patioweather on October 27, 2020

I did this without the lemons to make a pineapple simple syrup. It is amazing.

  • Carrot top pesto

    • patioweather on April 12, 2020

I was honestly very skeptical of this because it's the only recipe I found that didn't cut it with another herb like parsley. My partner and I both really like it though and will make it again anytime we have carrot tops. Can't go wrong with the combo of garlic and good olive oil.

  • Fudgy aquafaba brownies

    • patioweather on February 02, 2023

The recipe says that the batter will be thick, and it was so thick that despite the warning I was worried I did something wrong. I had trouble getting it to spread evenly in the pan. Ultimately, it didn't matter because it leveled out when baking. Tastes great!

  • Cheese tortellini with sausage and broccoli stems

    • minbody on December 09, 2021

This is really delicious (of course--it's got cream and Parmesan!), and it's very forgiving of extra veggies. I routinely add a couple of bell peppers (green and red, usually) and do more broccoli stems, which I like just as much if not more than the florets.

  • Avocado pasta with a crunchy cilantro stem sprinkle

    • amgenove on February 26, 2021

I wasn't sure what to expect, but I loved how this recipe turned out! I used panko breadcrumbs. Worked well with bucatini, but you can probably use any pasta.
