      This is a really good curry - and it does pack a punch! I used pork tenderloin instead of beef. Fabulous served with lemon basmati.

      Delicious. I made with stewing beef in an Instant Pot for 20 min on high - next time I would reduce by half the amount of liquid just before starting the pressure. I added potatoes to bulk up a bit. Delicious gravy.

      Great flavours in this curry. I will definitely make this again! I omitted the curry leaves and had to add dried ginger instead of fresh - it’s a terrible compromise but I had none of these essentials in my pantry.

  • Baby eggplant masala

      We loved this masala. I had tamarind paste so didn’t need to make the paste and this saved some time. I added about half a cup of mushrooms and sliced an entire orange pepper - items from my fridge that I needed to use - it was about 80 percent eggplant. All other ingredients were added according to the recipe. I just added a squeeze of lemon juice - that elevated the masala to amazing from good.

      Lightly spiced shrimp - perfect on a piece of pappadum as a finger food. it does required planning ahead for a 6 hour marinade.

      A very standard oil and vinegar dressed cole slaw - the addition of a chili and the use of coconut vinegar are the only clue this is a southern South Asia recipe.

      The masala was OK, and would be good as a side dish, but was a lot as a main dish with rice. I would have added more potato given the amount of cauliflower that there was - or better, just half the cauliflower with the same amounts of the rest of the ingredients.

      Probably more coconut milk than I'd do again. I used frozen spinach and it worked really well. Would make again.

      Nice change from the usual plain basmati rice. The lemon flavour was not pronounced, but the colour from the turmeric looked nice.
