      I was rushing and didn’t read the recipe properly - used only 1 tbsp of oil instead of 4. Therefore the granola didn’t crisp up much and came out more like a muesli. Which is actually still quite nice. I used rapeseed oil instead of coconut oil. Would make again.

      This was okay. Easy to make with store cupboard items (also added a handful mushrooms). Left me a bit underwhelmed but might try again at some point.

  • Chocolate and strawberry shake

      Would call this a smoothie, not a shake. Used frozen raspberries and the drink came out very icy! It tasted nice enough, albeit a bit sharp, so maybe a nice one for summer. I did like the subtle hint of chocolate from the 1tsp of cocoa powder.

  • Bean soup with kale and pesto

      Another easy recipe from this series of books; it tasted nice enough but I probably wouldn't make it if I wasn't fasting. I needed to add a bit of soy sauce for some oomph.

  • Spiced bean and spinach soup

  • Quinoa, broccolini and asparagus salad

      Nice! Not too much faff to make. Doubled broccoli as no asparagus in. Also no yoghurt, so only used oil and lemon juice in the dressing and crumbled some feta over. Would make again.

  • Homemade coleslaw

      Not a big fan of dressing-heavy coleslaws, so only added around 50g yoghurt and 1tbsp mayo. Tasted okay. Quite liked the thinly sliced celery in there.

  • Low-carb omelette wrap: hummus, carrot and spinach

      This was good, but not very filling. Definitely a fast day recipe.

  • Smoked barramundi with lentils

      Made this with smoked tofu instead of fish to keep vegan. Fried the tofu in a separate pan and added at the end. Added some chillies to my lentil mix, and it all was a surprisingly delicious meal! NOTE - this recipe is called "Smoked haddock with lentils" in my book...

  • Stir-fry tuna with hoisin sauce

      Made with smoked tofu instead and served with flat rice noodles. Really quick to make with the ready made sauce. DH loved it.

  • Sesame salmon with broccolini and tomatoes

      Made with salmon for DH and tofu for myself. No broccoli in, therefore subbed with courgette (roasted for 30min) and pak choi (chucked in at the end with the salmon). Easy prep/cooking, like most recipes from this book. Tasted good all round!

  • Thai curry with prawns

      Delicious - i added crunchy chilli oil, fresh coriander, shallots, then baby asparagus and tenderstem broccoli instead of sugar snaps. Served with basmati. V good. Next time would add crispy shallots and a few toasted cashews. Also was missing the thai basil, shame.

  • Easy chicken tagine

      Made with vegan ‘chicken’ pieces and an additional aubergine that needed using up. Added the optional Harissa paste. Served on couscous. Came out quite nice!

  • Sausages with onion gravy and cauliflower mash

      Next time I'll use 1 tbsp of tomato paste instead of sauce. Mashed 1/2 cauliflower and 1 head of broccoli with garlic, salt, pepper, and 1 tbsp of creme fraiche.

      DH hated the mash and wouldn’t eat. I thought it was actually okay. The gravy didn’t totally work for us either, it was a bit too sweet. I didn’t completely dislike the dish though and might make again. Made with vegan sausages.

  • Peppered pork stir-fry

      Made this with smoked tofu instead of pork. Loved it, though ended up adding a bit of water to the sauce to stretch it. Maybe double it next time.

  • Spicy bean chilli

      A pretty standard chilli recipe, not very exciting but good to use as a base recipe. I usually add veg that need to be used up. It’s not spicy though, need to drizzle hot sauce over when serving.

  • Mushroom and vegetable biryani

      A pretty quick and easy mid-week dinner. Nothing special, but worked fine for us to use up some frozen veg and a curry paste. Didn't do the eggs.

  • Creamy cashew and tofu curry

      This was alright and not too tricky to make. No thai curry paste in the house, so used a korma one instead. (Different flavour profile, I know…) Edit: tastes much better on the day after!

  • Pesto lentils

      Enjoyed this, very simple to make. Nice template for using up veg from the fridge - didn't have pesto in, so just used a red pepper dip (Ajvar), which came out fine. Need to remember this for when I'm short on time to produce a meal.

  • Curried mince and peas

      Took some liberties with this recipe for carnivorous husband and it turned it great! ?? Used beef mince, fresh spinach and frozen peas. Added crunchy chilli oil and masses of fresh coriander, a little garam masala and a spoonful of Greek yoghurt. Needed more curry powder as not spicy enough. Was missing lentils so added a packet of Persian style rice with lentils Merchant Gourmet. Finished up resembling a fabulous beef keema. Disappointed not to have any leftover to freeze (because we ate it all).

  • Chickpea and pistachio pot

      I replaced the pistachios with cashews as didn’t have any. The stew is okay, not my favourite as not very exciting, but have been enjoying for lunch with a couple fried eggs on top and drizzle of sriracha. Might be quite different with pistachios…

  • Byron Bay bars

      These were meh. Very tasteless, desperately need some sweetness. The few dried fruit helped, and thankfully I’d added a few dark chocolate chips too. Not enough, though. Have now covered the bars in a layer of melted dark chocolate, which helped a bit. Won't make these again.

  • Chocolate beetroot brownies

      Made couple of adjustments - only had half the amount of beetroot called for, used less oil than stated (after my recent oily brownie disaster), and used half SR flour, half buckwheat flour. And added couple tbsp sugar! Result is more cake than brownie and very bitter tasting. It’s not bad, the 9yo loves it, it tastes better when completely cold, but it’s not a brownie…
