      Added an onion and used veg stock cube and butter beans. Also added half a green chilli, as initially the soup seemed to be really bland. But in the end, sprinkled with a generous amount of chives, I actually really enjoyed it.

  • Celery, broccoli and Stilton soup

      Made with white beans in place of the Stilton. Was alright, a bit bland maybe. Found it quite watery, next time would add only half a litre of stock initially, and then add more after blending if needed.

      Made this with added (cooked) red lentils to up the protein. Would make again, tasted great and was easy and quick to do. Might reduce the quantity of coconut milk as it was perhaps slightly too rich.

      Fits the bill, quick and easy to do. I used dry lentils, adding them with the tomatoes and water, then added the chickpeas for the last 10 minutes. Used frozen spinach, it would be better with fresh.

  • Crunchy rainbow salad with cashews and ginger

      This is right up my street - asian flavoured slaw with crunchy nuts/seeds. Thought that the ginger in the dressing really made this dish (don't skip). Edit: Found it doesn't keep very well, definitely finish it the day after making.

  • Lentil, courgette, feta and beetroot salad

      I didn't think this was great when I first made it, I thought it was really bland, despite the feta. Next day I added some home made tzatziki as a dressing, which helped lots.

      Very underwhelmed by this. Used edamame, increased the amount of curry powder, it was claggy and bland. Won’t repeat.

  • Lemon chicken

      Made with smoked tofu instead of chicken. Was very good! Had on a small portion of chilli flavoured basmati rice.

      Made with tofu - spread the pesto on sliced tofu. Had with bulgur/quinoa mix. Was maybe slightly on the oily side, not a wow-dish, but enjoyed it. Would probably make again for a quick dinner.

      We enjoyed this — it rates highly on the effort versus results scale, and only 400 calories per serving, served with cauliflower rice and yoghurt. I’d add some vegetables next time — e.g. carrots or courgettes.

      Have used as a basic guide, as not all the ingredients on hand, but was very good and would make again. Had tofu, mushrooms, noodles, chilli; added ginger and edamame. Made the broth with a stock cube and miso.

      This was good. Liked the seeds with the roasted veg. Didn’t have goats cheese but had with bulgur and hummus. Nice!

      Made this with smoked, firm tofu instead of paneer. Was nice, easy, filling. Had mine with cauliflower rice, DH with plain basmati. Would make again.

  • Creamy cashew and squash curry

      The sauce was too thin for my taste, so added a can of chopped tomatoes and a couple handfuls dry red lentils. In the end the curry came out great, I did really like the cashews in it. Even though it took some time to cook, would certainly make again.

  • Harissa baked cauliflower with roasted almonds and grapes

      I liked the roasted grapes and almonds but thought the cauliflower was a bit greasy. Might just drizzle the cauliflower with a bit of oil and toss in ground spices next time - maybe my harissa paste is a very oily one. Liked the yoghurt dip drizzled over.

  • Quick veggie chilli

      Quick, easy store cupboard dish. Used kidney beans and a can of lentils in place of the Quorn mince. Tastes okay, maybe slightly bland, but can remedy with toppings like sliced chilli or hot sauce. Would make again.

  • Ginger cookies

      These were excellent! Though I made a few (minor) adjustments: used 1 whole egg instead of 2 egg whites, added 50g of wholemeal spelt flour, used rapeseed oil instead of coconut oil and added a few dark chocolate chips to each cookie (for a slim chance that my family would like these no-sugar cookies!). I think they came out great and I'd make again.

  • No-added-sugar coconut and choc-chip cookies

      These are nice and very reminiscent of coconut macaroons. I found 20g of chocolate chips are plenty (as opposed to the stated 40g). Not a good idea to have these around on a fast day though.

  • Almond pancakes

      Made these for the kids this morning. I felt a little silly as I thought the serving suggestion (serves 6) meant for the amount of people but have since realised it means how many pancakes it makes. Would suggest doubling the serving. Taste wise was fine, albeit a bit bland but was to be expected from sugar free pancakes. They were soft and soaked up toppings wonderfully (we used maple syrup). Would probably make this again for the kids as they are quite healthy.
