  • Herbed nut roast

      Very much enjoyed. In my opinion it would not serve 6. 4 of us ate it easily and we had a lot of sides as well. I think the quantity of 200g of squash is a bit low and could easily be more. It did crumble, but that didn't matter. Lots of chopping involved but it was worth it. It did need the mushroom gravy - which was also very good. Update. Did again with extra squash and it changed the flavour too much. Don't!

      Really good. Didn't have the tarragon because it got used in the accompanying nut roast. Just popped a couple of sprigs of thyme into the mushrooms soaking instead. Thickens nicely. Will definitely do again, and not necessarily just for when a vegetarian is visiting!

  • Tomato and aubergine bake

      I had no idea how this was going to turn out. Cooking vegan for my son who is finally allowed to visit. Very good and tasty overall. Couple of things - the order of which we are told to do things should be different. The cashews need soaking well ahead - which I forgot.. Start with the tomato sauce - it needs cooking down more than stated, hence my end result was a bit too wet. Then griddle the veg. I was dubious about the need for the hazelnut/parsley topping, but it really adds with respect to texture and taste - don't be lazy and skip! It would feed six generously, 8 with sides.
