      This recipe is delicious! I had a typo in the instructions in my copy though. It says to roast the mushrooms for 2 minutes until golden brown and crispy around the edges, but that definitely isn't correct. I wasn't sure if it was supposed to be 12 minutes or 20 minutes, but it was definitely 20 minutes. So so good!

      This was good, but although I love grilled corn, I'm a guac purist and there was way too much going on here. Maybe call it "Grilled corn and avocado dip" instead.

      Made for Super Bowl 2024. Things I learned about this dish: when the author calls for pie pans, the recipe makes enough crust and filling for two deep dish pans. I also had at least six cups of leftover chili. All elements of this recipe are delicious so no complaints…but it is a huge recipe.

  • White bean and chicken chili, cornbread croutons

      Cornbread recipe has scaling issues. As I was mixing the batter, I thought to myself that there was absolutely no way this was fitting into a ten inch cast iron skillet. And it didn't. It might be okay in two ten inch cast irons, or two 12 inch might be even better. I put in just about half the battery and it overflowed while baking. Additionally I baked an extra 10-15 minutes before it was done in the center.

      This was so good. I was a little apprehensive when the beef came out of the slow cooker, it seemed a little under-seasoned. Once all the parts of this dish were assembled, though, it was out of this world. Loved it while watching my beloved Hawkeyes play.

  • Blueberry and cinnamon hand pies

      Scaling issues with this recipe as well. The dough was supposed to be rolled out to 1/4" thickness and cut into twelve 6"x6" squares. I rolled to 1/8" thickness as I couldn't imagine getting the required number out of the dough, and I didn't really want 1/2" thickness of dough around the edges of a hand pie. I still only got eight out of it, even with rerolling the scraps and using all but about a tablespoon worth of the dough by the end. You'd need to about triple the dough recipe if you wanted the full 1/4" thickness to get twelve hand pies. I have enough filling left for probably 4+ more hand pies, and I filled generously. Also nowhere near cooked in the 15 minutes specified.

  • "Elvis" peanut brittle and peanut butter-banana pudding

      An interesting take on banana pudding. I enjoyed the peanut butter addition. However, way, way too sweet for me, and absolutely huge. It didn't come anywhere close to fitting in my trifle dish, or my largest glass bowl. There have definitely been scaling issues throughout this cookbook for me, it seems like they didn't test the recipes very well.
