  • Blonde peanut butter cookies

Nice peanut butter cookie. You can definitely pick up on the lemon juice which gives them a bit of a twist. I subbed 00 flour for wholemeal flour. These don't keep well at all at room temp. but they freeze perfectly.

Incredible recipe, yielding divine chewy cookies every time. An easy make ahead party pleaser.

  • Fluffy blueberry muffins

Disappointing, and really problematic recipe for me. First, a major issue with this book for the American reader is it is not translated from British English into American parlance. She calls for a "large" muffin tin in step 1 (and says the recipe will make 10 extra-large muffins elsewhere). This would be a "jumbo" muffin pan - I did not realize in time. She wants them baked at 400 F (she actually writes C but means F), which is high for a muffin usually done at 375. The measurements for the blueberries seem off. I had a bag of frozen blueberries weighing 340 grams and that was about 3 cups. She calls for 430 grams/3 cups blueberries. She strongly urges to undermix - great advice. I would have gladly followed that advice had I not had to elbow my way through the dry, floury batter. I adjusted time in oven to 25 minutes. Too brown on edges, colored blue elsewhere as I couldn't undermix. Undersweet, lacked a pinch of salt, and just meh.

Smothered with extra butter and crumbled feta cheese on top, such delicious savoury scones.
