      Perfect for when you need a very quick chocolate fix. Sandwiched together with apricot jam and used the ganache only as a topping.

      My dad raved about this. Had to make it with eating apples rather than Bramleys, but it worked well. Would like to try it with the recommended tarter apples. Took far longer to cook than the suggested 35 mins in a 160C fan oven.

      There is a lot of butter in the dough, but it all comes together in the end, do not despair. My cube pan did not have the exact size dimensions specified in the recipe so I slightly underfilled the cavities, and the dough did not rise high enough during baking to force the brioche into the exact cube shape. Nevertheless, they looked great and tasted excellent filled with the pastry cream. The bruléed tops are a nice touch but not essential.

      Nice flavour but no where near as light and fluffy as other waffle recipes I've made. I only used the zest of 1 lemon and it was definitely lemony enough 2 would have been far too much!

      These are addictively good! The batter needs to rest for 30 minutes before frying, but I even put it into the fridge for several hours and fried them off right before we needed them. Perfect make-ahead dessert. Highly recommended!

      The pastry is gorgeous and easy to work with. Don’t skimp on the Demerara sugar on top, gives it a lovely crunch. Used a shop bought mince and jazzed it up with some brandy and grapefruit zest but will be trying the full recipe in future.
