    Guacamole— I left out the tomatoes and (sad to say) the jalapeño for my spice-averse family, but otherwise followed the recipe. It’s a classic guacamole, and it disappeared rapidly.

      This tastes very healthy and I don't mean it in a bad way! It's fresh and doesn't linger in your gut, if that make sense. I roasted the chickpeas before adding them to the salad.

      This recipe involves quite a few steps and prep time for a mediocre tasting pizza. I used pre-made pizza dough from Whole Foods, so I can’t comment on the homemade pizza dough, but the tomato sauce (recipe elsewhere in cookbook) was bland and too acidic to our taste preference, and even with dairy mozzarella, roasted red peppers, sun dried tomatoes, and the grilled vegetables (recipe elsewhere in cookbook), the baked,finished pizza was underwhelming. Won’t be repeating. Two of us ate three slices and threw the rest away.

  • No-bake chocolate, pistachio & cranberry squares

      Good with a very dark chocolate flavor. A little square goes a long way for a chocolate fix! We liked the chewiness provided by the dried cranberries and dates, under a scoop of vanilla ice cream but it was very hard to cut into squares after being in refrigerator for several hours. Next time I’d take the pan out at least 30 minutes before cutting. Substitutions: didn’t see digestive cookies in my large grocery store so used thin chocolate cookie square type cookie; subbed butter for the coconut oil. Used Ghirardelli dark chocolate for the chocolate.
