      Who doesn’t love a tray bake? This won’t set the world on fire but it’s an good one to have in your arsenal. I added the lemon rind as well as the juice, which worked well.

      This is why I love EYB: had some chicken thigh cutlets and wanted a quick easy dinner. This was delicious. I actually let the potatoes & chicken marinate for 1 hour before I roasted them off. Had fresh oregano in the herb garden ;-). I also added some preserved lemon. Served with a plain leaf salad... "can we have this again?"!

      A lumberjack cake recipe without coconut? I used almonds for the topping (instead of sliced pecans). Recipe should come with a warning that its addictive (as well as time consuming)
