  • Seafood laksa

      I made this Seafood Laksa from scratch. The result was great, it had really good flavours, and wasn't too spicy, despite of the chillies that went in the paste. I tried a couple of different recipes to try to make it as traditional as I could, but there were some ingredients I couldn't get, and had to use my imagination to make something similar. For instance, I couldn't get fresh galangal, and used powdered one instead, and also had to make my own fish balls. I checked for recipes online, but most of them used 'surimi' which we don't like, so I decided to make the balls from the recipe I have for Thai fish cakes, which are really delicious, and it worked wonders.... I followed the instructions to cook the rice noodles, but they were a bit overcooked!! Ah well, ....

      This pasta dish is full of Mediterranean flavours and it takes only 30 minutes to make. This is a favourite pasta salad. A meal on its own. The fresh tomato sauce is delicious, and the fresh tuna, coated with garlic is yummy. Love it!

      There are many versions of this popular and healthy salad. I find this one the best version I have tried so far. Instead of using potatoes it uses orecchiette pasta. The dressing is just delicious.

  • Individual Caesars with sardines

      This is one of those salads that everyone seems to have their own way to prepare it. I usually make a big salad instead of individual ones, and the sides vary from fish to chicken to meat.... depending of what I have in the fridge. But what really makes this salad for me, it's the dressing. Just sooo delicious!

      Love fresh sardines, but they can be very heavy if you eat too many. This recipe uses mini papadams instead of croutons and prosciutto instead of bacon. The sardines are crumbed with breadcrumbs, parmesan and parsley. Very simple to make and just delicious!!

  • Salmon burgers with tzatziki

      Last night we had also a very tasty fresh salmon burger. It is served with salad leaves, tzatziki, caramelised fennel and semi-dried tomatoes on Turkish bread rolls. I hadn't cooked this recipe for quite a long time and had forgotten how delicious it was. Just delicious! For these days when you feel like some comfort food. It beats the takeaway fish patties!

  • Thai fish cakes with cucumber dipping sauce

      These fish cakes are super easy to make and they are beautiful. They are suitable for celiacs because they do not have any flour or breadcrumbs. They need resting in the fridge for about one hour, so you can prepare them ahead and then it takes nothing to cook them. Super delicious with the dipping sauce. I love them with a Crunchy Asian salad on the side to have a whole healthy dinner.

      This is one of our favourite warm salads. It's a main at our house, and it's full of fantastic flavours. On top of everything, it's very easy to make and it's also healthy. If anything, though, I would probably put less soy sauce next time. It can be very salty. Love it!
