    Very nice. Used her suggested replacement of rice with cheese to play to the audience a bit better and it made a very cohesive slice. Would repeat.

    Used half the amount of onion at it was still so much!!

    I reduced the red onion to 1/4 for one cauliflower, following lauraep's advice. Soaking the onion in vinegar mellows its intensity. Along with the tomato & parsley, this is a colorful side dish with a terrific blend of flavors.

    This is a very flavorful simple summer salad. The extra step of salting the cucumbers really makes a difference.

• Garden pea and broad bean stew with eggy bread (Mâncare de mazǎre şi bob cu frigǎnele)

    I didn't have favas and used Rancho Gordo's green baby limas instead. The tender beans with sweet peas and dill in the tomato stew base was fantastic. This dish manages to feel both cozy and fresh—perfect for a chilly spring day!

• Fish paprikash with egg dumplings (Papricaş de peşte)

    This is a lighter take on paprikash thanks to the fish and the slightly more broth-y sauce. The egg dumplings are easy to make and a lovely change from packaged noodles. Next time I would fold some chopped herbs into the dumplings for a little extra flavor.

• Dill fishcakes (Chifteluțe de peşte)

    This was easy to pull together and very flavorful. I used lingcod as the fish, and salted to taste. One egg was plenty for me.

• Chicken pilaf with potatoes and garlic courgettes (Pilaf cu pui)

    Made the house smell amazing. Had to cook it longer because rice and potatoes were al dente. Took the chicken thighs out and simmered on stove for an additional 15 min. Totally worth it.
