      I'm not a huge salad fan but I decided to make this because I'm a grown up and need to eat my greens. I traded out the romaine lettuce for mixed greens and this was actually a really good filling salad. It was pretty easy to make and I do feel like you can make it ahead of time just by separating the ingredients. I will definitely be making this again.

      We really enjoyed this dish. I used gluten free pasta, so lost some of the protein as mine was not high protein. Because of a cow's milk allergy, I used Pecorino Romano sheep's cheese and a soft sheep's milk cheese (Wooly Wooly) in place of the low fat ricotta. I used Trader Joe's petite peas. It was easy to cut in half for two people and easy to prepare. I will make this again, possibly with a high protein gluten free pasta.

      I haven’t had meatloaf in forever! Probably because whenever I had it as a kid, it was kind of heavy, one-note and boring. But this recipe looked pretty good, with lighter ground turkey and Asian flavors. So, we gave it a try tonight. Lovely weeknight dinner recipe, and quite easy! Combination with the heirloom carrots and baby bok choy was nice, light, and flavorful.

      Made subs to suit what I had and it was a crowd-pleaser. Used Omaha steak seasoning instead of Montreal and neither kid thought it was spicy. Used 1 lb. (who has 3/4 lb.?) 80/20 ground beef so the calorie count and fat obviously went up. It did need salt. Will make again.

      Really good - and so easy! My wife loved it too. I doubled the recipe so we'd have leftovers. The only tweak I made was to cook Jasmine rice in the Instant Pot, then toss in edamame and grated ginger with the rice once it was cooked. This will be in the regular dinner rotation for us.

      Delicious, and quite easy. The Momofuku chili crunch I used was super hot, but the heat goes away quickly. I used short grain brown rice, which was nice and sticky.

      Delicious, simple and easy soup. We enjoyed this very much. I made a couple of small tweaks, and still thought it turned out fine. The store didn’t have leeks, so I used shallots, and my wife doesn’t love dill, so I used thyme. Lovely for a cool and breezy fall evening.
