  • Potato bacon cheddar breakfast bake

      This is a pretty straightforward & very hearty frittata (or as he calls it...breakfast bake). I used a skin-on red potato in place of a russet and as I always worry about underdone potatoes, I gave them a quick steam as a head start. I also added diced red pepper for at least 1 veg in the pan. With homemade chili sauce spooned over and toast + a little salad on the side, this was a good "eggs for dinner" choice.

  • Baby spinach and bacon with spicy pickled red onions and feta

      This was a very tasty salad with some great add ins (ie see the title :). The recipe for pickled red onions given here has also appeared in other titles by Smith & happens to be my gold standard version of pickled onions. The dressing is a nice sharp/sweet combo with red wine vinegar, mustard, brown sugar & a bit of the rendered bacon fat in addition to extra virgin olive oil. This will be made again.

  • Spicy orange-poached salmon with ginger soy marmalade

      Very flavourful and easy to put together. The recipe halved well. I do not have shallow bowls for serving (like the picture) so we just had the salmon on the plate with no extra broth and I believe the shallow bowl with broth would be even better.

  • Roasted cherry tomato penne with Italian sausage and fresh basil

      Throwing a cast iron pan full of grape tomatoes, onions, whole garlic cloves, torn basil and chunks of sausage into a hot oven and ending up with a delicious pasta sauce (easily scaled up or down) makes me feel like a genius. Served over penne or farfalle and with extra basil & a shower of parmesan to finish, this is a household favourite.

  • Molasses rum grilled pork tenderloin with grilled green and red onions

      I for sure thought we would love this based on molasses, spiced rum, grainy mustard and my Caribbean Splash hot sauce (pineapple & Scotch bonnet based) but somehow the flavours got lost and didn't really pop. It just seemed a bit sweet. Unlikely to repeat.

  • Chewy chocolate chip cookies

      This recipe has LOTS of brown sugar + the instruction to not overbake them (ie EXACTLY 12 minutes). Okay, but when asked to scoop the dough using a "small spoon" to get 18 cookies, I was looking at the bowl doubtfully. I weighed the dough & divided it by 18...the result was that my dough balls needed to be 58 g each - uhh "small spoon"?? I went with 40'ish g cookies (got 26 and they are plenty big for us) and baked for 10 minutes... & I'm pretty sure that was too much. They were good early on but very worried they will be like rocks in a day or 2 :(
