      Loved this... We kept the veggies and quinoa. Separate until serving. Then dressed at the table. We had more veggies than quinoa, so we used the veggies in a quick tofu scramble.... Yummy & easy!

      Super easy and satisfying weeknight dinner. Mashed pinto beans may need some salt and a little water added to achieve the right spreadable consistency. We also added chopped scallions, sour cream and cilantro as toppings. Healthy too, if you use whole wheat tortillas and go easy on the sour cream!

      This recipe is truly delicious and easy to make. The balance of seasonings is delightful (do try the caraway seed). It makes a lovely light supper accompanied with an artisan loaf and a salad.
