      Book recommends veg: mushrooms, red pepper, courgette, aubergine, red onion, spinach (170g). But really you can use whatever leftover veg you have. This is a brilliant dinner option - great for kids. Didn't have any dairy free cheese so made one for daughter with just passata and veg and it looked pretty good. Will make again.

      This was quick and easy to make. Tasted nice but not very exciting. Might look into alternative dhal recipes. Toddler rejected this but ate yoghurt and poppadoms.
