Notes about Recipes in this book

  • Pickled herrings 3 ways - mustard herring (Senapssill)

    • Lepa on November 17, 2018

I hosted a Scandi party and this was one of the best dishes. It was the best pickled herring I have had!

  • Soused cucumber and dill side salad

    • Lepa on December 23, 2021

I made this to go with Swedish meatballs and it was so good! I think cooking the sugar/vinegar and pouring it on the cucumbers when hot makes such a difference. They were tart and sweet and perfect with the meatballs! I left them for an hour in the refrigerator to cure/cool.

  • Blue cheese with toasted hazelnuts [open sandwich]

    • Lepa on November 17, 2018

This might be my favorite open faced sandwich ever. It is incredible- highly recommend!

  • Smoked salmon and egg [open sandwich]

    • Lepa on November 17, 2018

I think this is a bit bland but my husband is a huge fan. The dill sauce is lovely.

  • Traditional apple and beetroot salad

    • Lepa on November 17, 2018

I was intrigued by this recipe, as it is so unusual. It was fine but I probably won't make it again.

  • Real Swedish meatballs

    • Lepa on December 23, 2021

My husband has been craving a Swedish meatball feast and we won't be visiting again any time soon so I found this recipe and made the feast. We ate them with mashed potatoes and gravy, pickled cucumbers and ligonberry sauce. What a treat! I made these closely following the recipe (with oats/broth for the binder). I used the 1 tbsp scoop to make the meatballs and liked the size but they took longer to cook- maybe 8-9 minutes? They were delicious. I recommend this recipe- and this book, which I adore but doesn't get a lot of love on this site.

  • Creamed rice pudding with warm cherry sauce

    • Lepa on November 17, 2018

I made this for Christmas Eve and it was a hit. We loved the combination of dense rice pudding with whipped cream folded in and cherries on top!

  • Cinnamon wreath with rye

    • Lepa on December 09, 2018

I was a bit confused by the directions, which mentioned making two rolls and then didn't say what I should do with them. I would need two rolls to make my wreath look like the one in the picture but I made one, followed directions from another website to shape it and everything turned out fine. I cooked the wreath for 25 minutes and it looked a bit dark. I was worried I had burned it but once I put the icing on it everything looked fine. I made this for a holiday party and received enthusiastic feedback. It was good but I'm not sure I'll make it again, given all the time and effort involved.

  • Real cinnamon buns

    • Lepa on September 28, 2019

These are the best kanelbullar I have ever made. The dough is rich and scented with cardamom. The finished bun is moist and full of flavor. I made knots instead of the swirls described in the book (because they are so pretty) and they were done in twelve minutes. I cannot get over how fantastic these are!

  • Danish dream cake (Drømmekage fra Brovst)

    • Lepa on November 17, 2018

This cake is delightful! The coconut topping on mine was not dark like the picture so next time I will cook the butter and sugar for a while until it starts to darken and caramelize before adding the coconut and milk.

Publishers Text

There's so much more to Nordic food than pickled herring and meatballs. Stretching from the midnight sun of northern Norway to the flat, fertile fields of Denmark, Scandinavian food culture is a lot more varied than you might think. Dishes and ingredients link all the regions together, bringing a uniquely Nordic food experience to life that was created by thousands of years of heritage and shared culture. Scandinavian food is simple. Natives call it 'husmanskost' (farmer's fare). It's natural and honest. When you work with the very best produce, there's no need to overcomplicate it. Its appeal lies in the fact that it is healthy, wholesome, flavoursome, simple to make and beautiful to look at. This book features recipes for all occasions and times of the day, ranging from morning buns, lunchtime savouries, hearty dinners and indulgent desserts, to bakes and other foods for special celebrations. Enjoy fresh and simple open sandwiches, healthy Nordic salads, delicious traditional hot dishes, and indulgent cakes. Discover new flavours and textures from mustard pickled herring and gravlax to sticky Kladdkaka cake.Alongside the recipes, the book includes enlightening features on traditional events throughout the Nordic calendar: find out what happens at an Easter crayfish party, why Swedes love a 'fika' (literally translates as 'to meet up, have a coffee and a chat'), be inspired by the joyful Midsummer day celebrations, host a traditional Christmas glogg party, and get an insight into the tradition of the Smorgasbord. It's all here to discover and enjoy.
