      Simple and delicious, and ripe for variations. I added capers. Cooking time will vary with the thickness of the salmon fillet, I cooked mine for about 14 mins, and they came out slightly pink in the thickest part.

  • Roast leeks and soya beans with buffalo mozzarella

      This was a quick vegetarian dinner. I didn’t have basil or mint but used a pesto cube from my freezer and that worked fine. It wasn’t an amazing dinner but it was good enough.

      I cooked this as a side for a bbq. The flavour was tangy and quite complex, it was a good refreshing side. Next time I would make sure to cut the broccoli even smaller so that it's bite size, I also didn't add the full amount of kale but would next time.

      I made this with broccoli raab, and a different kind of kale. Blanching the broccoli and kale is key. I used garlic scapes instead of garlic, which worked fine.

      Another excellent cauliflower recipe from Ottolenghi. I didn’t add the olives and needed some acidity so I added some capers and a squeeze of lemon.

      Quick and easy with good depth of flavour. Reheats well in the microwave too.

      Delicious and relatively easy. I made half a recipe with everything halved except for the water added to the marinade, I goofed and added the full amount, so the sauce was not as sticky as it would have been, but the drumsticks were delectable nonetheless.
