      Used the buckwheat batter recipe from this book which made 2 med/lge and 1 small pancake. Topped with shaved manchego, cherry tomatoes, black olives, toasted pine nuts, shaved salami and basil leaves. The idea of smoked paprika didn't appeal but I think it needs something to give more flavour. Mr P thought a blue cheese would help. Definitely worth repeating and I'd think of maybe using a combination of red onions, mushrooms, pancetta/bacon, red peppers and a stronger cheese. Slightly fiddly to cook more than one due to putting the pan under the grill to finish off. Next time I may make one very large pancake on my flat girdle and slice into portions to serve. Good when you want something that is not too heavy for dinner.
