  • Pork, fennel & chilli baked pancakes

    • Pamsy on May 01, 2019

Very tasty and as I had pancakes in the freezer, not too time consuming, Used 3 large pancakes for 2 of us. Didn't add passata or tomato puree but used up half a tin of tomatoes which was sufficient. I loved the easy topping, so quick compared to making a bechamel! Served with steamed sweetheart cabbage.

  • Pizza crêpes with jamon, Manchego & tomato

    • Pamsy on July 19, 2020

Used the buckwheat batter recipe from this book which made 2 med/lge and 1 small pancake. Topped with shaved manchego, cherry tomatoes, black olives, toasted pine nuts, shaved salami and basil leaves. The idea of smoked paprika didn't appeal but I think it needs something to give more flavour. Mr P thought a blue cheese would help. Definitely worth repeating and I'd think of maybe using a combination of red onions, mushrooms, pancetta/bacon, red peppers and a stronger cheese. Slightly fiddly to cook more than one due to putting the pan under the grill to finish off. Next time I may make one very large pancake on my flat girdle and slice into portions to serve. Good when you want something that is not too heavy for dinner.

  • Buckwheat galettes, figs, Gorgonzola & honey

    • e_dzior on September 23, 2018

I replaced truffle honey with honeydew honey. I served with rocket salad (arugula). I recommend.
