Notes about Recipes in this book

  • All-purpose crustless quiche

    • elianita on January 05, 2026

This recipe is always a hit at my house! Very flexible and some parts can be assembled ahead.

  • Jammy egg toast (perfect eggs your way, every time)

    • Fazlet on January 23, 2022

      8 min eggs were perfect!

  • Coconut rice porridge with bananas, raspberry jam, and coconut chips

    • kshell on March 10, 2024

Easy and good base recipe. Have never made with all the toppings as called for.

  • Millet and amaranth porridge with figs and papaya

    • elianita on September 19, 2024

Wanted to love this recipe, but the flavor is a little too earthy.

  • Steel-cut oat porridge with peanut butter, chocolate, and berries

    • elianita on September 19, 2024

It’s my go-to oatmeal base recipe. I do make 1 1/2 cups of oats using 4 cups of water.

  • Super-quick broccoli-pea soup

    • kshell on March 10, 2024

Indeed this is super quick. The fennel makes it special.

  • Turkey meatball soup with macaroni and kale

    • Fazlet on January 11, 2026

This is wonderful. Adapted with Italian sausages rollled into meatballs without adding other meatball ingredients.

  • Saucy spaghetti and meatballs

    • emma_clare on February 20, 2024

I made this but using my own tomato sauce recipe, and I used a pork/beef combo rather than turkey. I was very dubious about not frying the meatballs and only cooking for 4 minutes, but it came out fantastically - very easy and delicious. I will definitely do it again. You could substitute any preferred meatball recipe and apply this method.

  • Kimchi and tofu stew

    • elianita on June 01, 2026

We really enjoyed this. It was so easy to make, yet very flavorful. I used chicken for the meat, and served it over rice. I think it makes 3-4 servings.

  • Refried beans

    • Fazlet on January 23, 2022

Awesome! Made this with spring onions instead of onions and used the broth and fat from the pulled pork.

  • Cacio e pepe risotto

    • Fazlet on June 04, 2022

      My go to risotto recipe

  • Stuffed sweet potato "tacos"

    • CorneliaCooks on February 28, 2022

I cooked two large sweet potatoes for 25 minutes, with the 10 minute natural pressure release suggested. The potatoes came out very tender--almost like a puree. Too tender, honestly. I had planned to try the recipe again (this time doing 20 minutes instead of 25), but I did some research, and I now feel that the recipe calls for too much water (6 cups). This amount of water means the potatoes are boiling, not steaming, which will reduce nutrition. So I won't do this recipe again.

  • Bubbly cheese-topped mac

    • elianita on May 13, 2026

Very easy to make. The pasta was cooked perfectly, and tasted really good, but this recipe as not as creamy as our usual mac and cheese. I had to add a couple of tablespoons of cream cheese and also sauté for a few minutes because the sauce wouldn’t thicken. I would make it again because it was so easy but with tweaks.

  • Red curry chicken with basil and lime

    • Fazlet on January 23, 2022

I use chicken thighs with bones and increase the time to 15 mins. Also add cherry toms and pineapple at the end.

  • Spicy coconut salmon

    • elianita on October 08, 2024

My family really enjoyed this recipe! I was surprised at how quick and flavorful it is. I added about 2 cups of chopped Kabocha squash since I know it goes well with coconut, and it was very delicious.

  • Moroccan spiced chicken and rice

    • kshell on January 29, 2026

Great flavors but I'm knocking off a star because the largest chicken thigh wasn't cooked through. Had to dirty more dishes and spend more time cooking the chicken separately. Next time: cook it for 7 MINUTES. I used only half a lemon to suit my family's tastes and it was just right.

  • Quick pork Bolognese for a crowd (Ragu allà Bolognese)

    • emma_clare on November 11, 2024

This was really delicious. I didn't use anchovies and went light on the harissa. I did add some Parmesan rinds I had in the freezer. I used frozen soffrito mix for convenience. The recipe is slightly more tomatoey than I would normally make, so I think I would reduce the amount of tomatoes next time. Overall it creates a very rich and tender Bolognese, which I would definitely make again.

    • elianita on May 27, 2026

This is my go-to bolognese. Crowd pleaser and great for feeding a bunch of people.

  • Simple saag paneer

    • hbakke on May 05, 2026

I swapped out the paneer for tofu, but otherwise followed the recipe. I used a combination of mustard greens, kale, and spinach for the greens and added small handfuls of mint and parsley to clear out the fridge. Despite not looking fantastic, this was very good.

  • Homemade chai masala

    • elianita on January 05, 2026

We really enjoyed this chai. It’s a really nice balanced tea. I will definitely make this often.

  • From-scratch pumpkin butter

    • tarae1204 on March 28, 2021

I made this with an end of season pumpkin that I had no other use for, and it produced a flavorful but slightly pulpy pumpkin butter. The texture was off putting as a spread. I finally used it in a recipe for pumpkin buckwheat buttermilk pancakes from the Kitchen Bytes blog.

    • kshell on March 10, 2024

Having made twice now, I really like the depth of flavor this has thanks to the coconut sugar. I like that it makes enough to freeze and is a "pumpkin" recipe with actual pumpkin in it, not just pumpkin spice. I could see where this is a tricky thing to eat though. It is not as sweet as jam and straddles a sweet/savory line. I think room temp would be good with a cheese platter. I happily eat it on buttered toast for breakfast.

  • Quick pomodoro sauce

    • kshell on November 08, 2024

I love this tomato sauce! But the note about cooking pasta in the sauce just doesn't work for me. It doesn't come back up to pressure and burns on the bottom. Just make the sauce.

  • Pulled pork

    • Fazlet on January 23, 2022

Reserve the oil and stock and use to make the refried beans! Brilliant!

    • elianita on May 27, 2026

      Excellent pulled pork recipe!
