      This is delicious! It's like Nekisia Davis' olive oil and maple granola but less sweet and with half the fat, which I appreciate. It's still plenty sweet and highly addictive. This will become my go-to granola recipe.

      We are huge fans of the NYT olive oil granola and this isn't quite as decadent but as the other poster noted, I appreciate this version that has less sugar and oil. It has the perfect amount of salt. I used pecans for the nuts and didn't use cereal because we didn't have any. We ate it, as suggested in the section about yogurt bowls, with plain yogurt, an apple and a bit of maple syrup and it was delicious. This simple and delicious breakfast is definitely going into our regular rotation.

      This is so simple. I can't believe I never thought of it. I came back to post again because this has become my standard breakfast since seeing this recipe. It is such a healthy and satisfying way to start the day. My kids love it, too.

      I used a grapefruit for these muffins. They were simple, light, and tasty. Some of the easiest muffins I've ever made. I did follow the directions exactly and only got 8 small muffins out of this recipe instead of a dozen.

      This was pretty good, though a little oily. It definitely won't be my last time roasting cabbage. I did feel like it was missing something, even if it was super easy to throw together.

      Mixed feelings about this recipe. I felt like the combination of ingredients didn't entirely go together, but my husband liked it. I used salami as a substitution for chorizo which I think was a mistake and the chorizo probably would have paired better with the recipe.

      This is barely a recipe but the results were actually really tasty for how easy this was to throw together. I used leftover ropa vieja from Simply Julia and cheddar cheese.

      This is easy and really good— memo to self: I made two, and it cooked a lot more evenly (interior cooked faster, exterior didn’t get so dark, overall took less time) in an aluminum 8x8 as opposed to a glass 8x8. Definitely aluminum next time.

      This was the best dessert I've made in a while! Surprisingly easy and the end result is impressive. It tastes like a lighter peanut butter cheesecake. I actually preferred it half-frozen since it tasted like an ice cream cake. Don't skip the chopped peanuts on top as it really makes the dish.
