      Youngest requested waffles for breakfast & I wanted to try a new recipe from a library borrow. These turned out great! Halved the recipe as that’s all the buttermilk I had on hand + used rice flour. Nice and crispy! Will try a flavor variation next time!

      I've previously made this with coconut milk, which is far richer, but the Jasmine comes through with regular milk. Nice and simple.

      Comes together quickly. Used Rancho Gordo cassoulet beans that I pressure cooked. Bright pink color even without the dragonfruit powder. A solid bean dip, but no wow factor other than color.

      This tomato soup was simple and very good, BUT... 3 tablespoons of Sriracha made it way too hot for me. Even my heat-loving husband thought it was too spicy. I would definitely make it again, but probably with 1 tablespoon of Sriracha. I'd put the bottle of Sriracha on the table for people to spice it up, if they want.

      Really yummy! I’m not sure if it was the green curry paste I used, but it was the most prominent flavor. I love the spice it added, but I wish I tasted the asparagus and coconut a bit more. Other than that, super tasty and easy-to-make soup!

      This was wonderful. The yogurt and hemp hearts really add to it, and I was surprised at how much I liked the jalapeño and salsa verde with the split peas. Easy, fast, delicious.

      I enjoyed this. Mr VT has a small complaint that it was a lot of the same. I used the tomatillo sauce from Cool Chile, it was nice but next time I might make my own salsa with more herbs and punch. We topped with feta and toasted sunflower seeds. Didn't have any yogurt in the fridge but I think this could have been a lovely addition.

      Made this soup in April 2026. It was delicious. I added a little under the 2 Tbsp of harissa (1-1/2 Tbsp) since I knew I could add more. It was a nice mild level of heat. I toasted almonds and used those and cilantro on the top of the soup. This is the first recipe I've made from a book that was given to me by my friend. I knew of Heidi Swanson and just decided to open the book and pick the first recipe that sounded good for dinner. This was the the first or second recipe I looked at!

      It is indeed a feisty tofu recipe! Excellent flavour combination. I added a squeeze of lemon to the stir fry to brighten it. Simple, and comes together quickly.

      After surveying the foods I had on hand I then saw the Cilantro-green curry paste here as well as the rest of the ingredients and it was kismet. This is a simple and effortless dish - as many I've made in this book seem to be, but packed with flavor.

      This cake is really fabulous! So easy, and SO good! I used finely chopped dried mango instead of the berries. It worked well, but berries would have been more colorful.
