The original Cook It in a Casserole was published as a wartime emergency cookbook. Because of the scarcity of metal, the supply of cooking utensils had dwindled and, while pottery and glass bakers were not especially plentiful, Italian, Spanish, and French earthenware casseroles and Limoges bakers were to be had in restaurant-supply stores where chefs shopped. The then new over-glass wares were just beginning to dominate kitchen counters in department stores. Today, for the recipes and menus in this completely new book of casserole meals, a gratifyingly large choice of baking dishes has become available all over America. Their variety and usefulness, charm and durability contribute to the pleasure of meal-planning and preparation. The old-fashioned "soft" earthenware casseroles and glass baking dishes are still favorites of many cooks.
