• Chewy no-bake granola bars

    Instead of coconut, I added mini chocolate chips. Since the granola bars do not have to bake, this was a simple, quick recipe and it tastes great. The Rice Krispies make the bars.

• Cinnamon streusel French toast

    Not a repeat for me. Far too sweet and the "streusel" is just cinnamon and sugar with a little butter mixed in. The topping caramelizes in the pan and makes a sticky mess and I think the milk/egg ratio was off compared to other recipes for French toast I've made.

    Very tasty! I doubled this recipe, so I could use the whole 15 ounce can of pumpkin. I would add some baking powder to this next time as they didn’t rise as much as I’d like. These do have quite a bit of sugar though. I may experiment next time with changing half of the flour to whole wheat just to make them a smidge healthier. These froze pretty well. The streusel, while super tasty, made freezing them a bit messier.

    I added a bit more cheese and replaced the veggie broth with chicken broth. Delicious, comfort food type soup.

    This was delicious, very flavorful and easy to make. I doubled the cheese, and the family declared it the right amount. I also threw in some cooked small pasta at the end because I had some around.

    Really tasty. Thought I had butternut squash and didn’t, so I used sweet potato. They mushed up a bit when mixing it all together, delicious, but not the prettiest. ?? would make this again!

• Tomato basil soup with cheesy garlic dunkers

    This is a delicious, easy tomato basil soup with mostly pantry ingredients. I like the addition of the roasted red peppers and the splash of balsamic vinegar at the end. They add a depth of flavor to the usual tomato soup. Definitely going on my rotation of soup recipes.

• Slow cooker lentil vegetable soup

    I made this in the Instant Pot and followed the recipe pretty closely with the exception of using red lentils instead of green. I didn't really love this. It was thick and mushy and had too much turmeric for my taste. I love a fridge clean out soup, but this had too much going on and not enough texture.

• Enchilada sauce

    I added a touch of brown sugar to help cut a tiny bit of the spice, but this was really good otherwise!

• Roasted butternut squash farro with kale-walnut pesto

    This was a nice early fall side dish for chicken. I actually had all of the kale pesto ingredients on hand except the fresh basil so i ended up using a vegan basil pesto that I had already made for another dish. I would like to try this again with the kale pesto. I wanted more squash so would increase that in the future.

    Really tasty. Thought I had butternut squash and didn’t, so I used sweet potato. They mushed up a bit when mixing it all together, still delicious, but not the prettiest. I would make this again! The pesto is really delicious too, will make that separately for other recipes, too.

• Sweet and spicy tofu with zucchini noodles

    The sauce was delicious and the orange juice and zest added a nice citrus flavor. I've never had zucchini noodles and had low expectations, but they were still relatively firm and pretty flavorful after cooking. The only change I would make would be to drain the tofu longer and cook it longer to get more crispiness. Overall a tasty dinner. I would make this again.

    I hadn't made chicken pot pie in years, so when my daughter requested it I went looking for a new recipe to replace the one I had previously been using as that one had no bottom crust and I definitely wanted an upgrade. This one is a a classic rendition but we all loved it. The only change I made was to make the crust in the food processor to save time (and reduce user error). Leftovers were also very good reheated.

• Asian-glazed sheet-pan salmon and broccoli

    The marinade and glaze perfectly complimented the salmon. Should have checked the salmon after 10-12 minutes as it was a little more cooked than I prefer. I substituted other vegetables for the broccoli. Excellent recipe. I will definitely make it again!

• Oven-baked cod with wine-herb sauce

    This was good for such little effort. My market didn't have cod so subbed sea bass but might like it better with cod. Served with mashed cauliflower and asparagus. This would make a good 'company' dish.

  As I flipped through the cookbook, I must have exclaimed, "Ooooh! I'm making that!" at least a dozen times. And, let me add that the photo of her son (bottom right) is pretty much my aesthetic.
