Publishers Text

The second book of the author of the landmark American cookbook, The Joy of Cooking. This second effort met with, at best, a lukewarm reception. Rombauer addresses the homemaker in a rush, and tries to help her use more canned and other quick foods. The acknowledgments include home economists from Proctor & Gamble, the National Canners' Association, General Mills (she thanks Betty Crocker by name), Lever Brothers, Swift, and Heinz. Many of the recipes included herein can be found in later editions of Joy. Perhaps sensing impending failure of the book, Rombauer uses the dedication to deflect blame. "This publication is the result of an indiscretion on my part. On a sleepless night the idea sprang (unlike Minerva from the brain of Jove) from a digestive disorder caused by an overindulgence in a Maine lobster dinner. I therefore dedicate is to my hosts, Mr. and Mrs. Niles Chapman, who tempted me, and hold them responsible for all consequences" (page [v]).
